Chinook or "King" Salmon harvested from the Yukon River are as large and wild as the river itself. These are 30-40 lb. salmon yielding 2-3 inch thick fillets. These King Salmon fillets have a substantial fat layer supplying you with all those wonderfully healthy Omega 3 fatty acids and keeping the fillet melt-in-your-mouth moist when baked or grilled.
The name Yukon comes from the native Gwich'in people who pronounce it "Yu-kun-ah" meaning "Great River". The Yukon River is the fifth longest river in North America. Its pure glacial water flows in a Northwesterly path 2,300 miles through Alaska and the Yukon Territory of Canada finally emptying into Norton Sound on the Bering Sea.
