Wild Alaska Salmon Patties
Ingredients:
• About 16oz. of left over Wild Alaska Salmon
• 2 Tbsp. of finely chopped onions
• 1 Tbsp of finely chopped green peppers(or Jalepeno peppers)
• salt to taste
• 1 large egg
• ¼ cup of bread or crushed, unsalted cracker crumbs
• Butter
Combine all ingredients except bread crumbs and butter in a mixing bowl and mix very well. Make a patty out of the mixture about ½ inch thick. Melt butter in a skillet or on a grill. Grill patties until hot all through and serve.
Wild Alaska Salmon Salad
Ingredients:
• 8 oz. Wild Alaska Salmon , Cooked or Smoked
• 1 dill pickle diced
• 1 Hard boiled egg, sliced
• 2 Tbsp. Mayonnaise
• 1-2 Tbsp. Ranch dressing
• 1/2 Tsp. Parsley
• 2 Tbsp. Onion, diced
• Salt & Pepper to taste
• 4 Lettuce leaves
In a bowl, mix well mayonnaise, ranch, parsley, and salt & pepper. Stir in pickle, onion and Wild Alaska Salmon. Serve salad mixture on lettuce leaves garnished with egg and tomato slices.
Makes 2 servings.
Wild Alaska Sockeye(Red)Salmon Stuffed Tomatoes
Ingredients:
• 1 1/2 Cups Wild Alaska Salmon Sockeye (Red) cooked and flaked
• 1 Tbsp. onion,minced
• 1/2 Tbsp. green pepper,diced
• 1/2 Tbsp. red pepper, diced
• 2 Tbsp. celery, chopped
• 3/4 Tsp. salt
• 1/4 Cup potato chips, crushed
• 1/4 Cup Mayonnaise
• 6 Med. tomatoes
Combine all ingredients except the tomatoes. Chill for 45 minutes or longer in refrigerator. Cut and remove centers from the tomatoes and fill remaining tomato shells with mixture. Serve chilled on leaf lettuce for garnish.
Makes 6 servings.
Zesty Wild Pacific Salmon Steaks
Ingredients:
- 4 Wild Alaska Salmon steaks, about 1” thick
- 2 cloves garlic, crushed
- 2 Tablespoons olive oil
- 1/3 cup chopped fresh parsley or dill
- 1 teaspoon capers
- 1 teaspoon lemon zest
- ¼ cup lemon juice
- pinch cayenne for each steak
Sprinkle Wild Alaska Salmon steaks with cayenne. Sauté 1 clove of garlic in oil at medium heat until golden and remove from oil. increase heat to medium-high and sauté your Wild Salmon steaks 4 minutes on each side. Add remaining clove garlic, parsley, capers, lemon zest and lemon juice. Cook 1 to 2 minutes longer. Serve drizzled with pan juices for a spectacularly good zip to a simple pan-fried Wild Alaska Salmon.
