Deep Fried Wild Alaska King (Chinook) Salmon Chunks
Ingredients:
• 1.5 lb's King (Chinook) Wild Alaska Salmon
• 1/2 Cup flour
• 2 Medium eggs
• 1 1/3 Cups bread crumbs
• vegetable oil
• Salt & Pepper to taste
Chunk Wild Alaska King (Chinook) Salmon into 14-16 pieces. Rinse Salmon in cold water and pat dry with paper towels. In a bowl mix together flour, salt and pepper. Dredge each King Salmon chunk in flour to coat evenly. Dip floured pieces in egg and then roll in bread crumbs coating them evenly. Deep fry Alaska Salmon chunks in hot vegetable oil (375 degrees) for 3-5 minutes or until coating is golden brown. Drain on paper towels.
Makes 4-6 servings.
Easy BBQ'D Wild Alaska Salmon
Ingredients:
• 4 Wild Alaska Salmon fillets
• ½ bottle Tangy BBQ sauce
• 1 tbsp lemon juice
• 1 clove minced garlic
• 2 tbsp. chopped parsley
• salt & pepper to taste
In a bowl mix together lemon juice, garlic and BBQ sauce. Pour mixture over Wild Alaska Salmon fillets. Salt and pepper Salmon fillets to your taste. Grill on a greased surface for 10 minutes or until done (Wild Alaska Salmon flakes easily when cooked). Garnish with parsley before serving.
Ginger Glazed Wild Alaska Salmon
Ingredients:
- 4 Wild Alaska Salmon steaks, cut about 1” thick
- ¼ cup low-salt soy sauce
- 2 Tablespoons rice vinegar
- 1 Tablespoon finely minced ginger
- 1 Tablespoon dry sherry
- 1 garlic clove, minced
- 1 teaspoon sugar, or to taste
Place steaks in shallow glass dish. Combine remaining ingredients until sugar dissolves. Brush on both sides of Wild Alaska Salmon and let your Salmon sit at room temperature for 30 minutes. Brush ginger mixture over Wild Alaska Salmon again. Broil or barbecue on oiled grill 4 to 6 minutes per side, turning once and basting again. Simmer remaining ginger mixture 2 to 3 minutes or until syrupy. Drizzle over cooked Wild Alaska Salmon immediately before serving.
Serve with rice and vegetables and enjoy the subtle elegance of Oriental seasonings in and over the great taste of Wild Alaska Salmon. If frozen, Wild Alaska Salmon should be thawed before marinating to maximize the marriage of flavours. Makes 4 servings.
Grilled Dijon Wild Alaska Salmon Fillets
Ingredients:
• 4 Wild Alaska Salmon fillets
• 1 tsp. lemon rind grated
• ¼ cup lemon juice
• 1 tbsp. extra virgin olive oil
• 2 Tsp. Dijon Mustard
• salt & pepper to taste
In a shallow baking dish combine fish fillets, lemon rind, lemon juice, oil, Dijon mustard, salt and pepper. Cover and let marinate for 30-60 minutes. Remove your Wild Salmon from the marinade and place on greased grill. Cook for approximately 15 minutes basting and turning fillets often. Fish will flake easily when cooked.
Serves 4.
