King (Chinook) Wild Alaska Salmon Potato Balls
Ingredients:
• 1/2 lb. cooked King (Chinook) Wild Alaska Salmon
• 1 Cup mashed potatoes
• 1 Egg
• 1/4 Cup shredded cheddar
• 1 Tbsp. onion, minced
• 1 Tbsp. chopped parsley
• 1/2 Cup flour
• Salt & pepper to taste
• Vegetable oil
Flake the cooked King (Chinook) Wild Alaska Salmon into a bowl. Mix Wild Alaska Salmon, potatoes, egg, onion, parsley, salt and pepper together. Form mixture into small balls and fold in flour. Deep fry balls in vegetable oil for 2-3 minutes (at 375 degrees) or until golden brown. Serve hot.
Makes 4 servings.
Salad Monterey with Wild Alaska Salmon and Lemon-Dijon Vinaigrette
Ingredients:
- 1¼ lbs. Wild Alaska Salmon fillets
- 3 Tablespoon olive oil
- 1½ Tablespoon lemon juice
- 1½ tablespoon snipped chives
- 1 tablespoon honey
- ½ tablespoon Dijon-style mustard
- ¼ -1/3 cup walnuts, chopped and toasted
- 1 pkg. (10 oz) ready-to-eat salad greens
- 1 cup red seedless grapes, halved
- salt and pepper
Preheat broiler. Cut Wild Alaska Salmon into 4 pieces, place on lightly oiled broiler pan and season with salt and pepper as desired. Broil Wild Alaska Salmon 4 inches from heat for 7 - 9 minutes or until fish flakes when tested with a fork.
For Dressing :
Combine oil, lemon juice, chives, honey and mustard in a shaker jar. Cover and shake well.Reserve half of the toasted walnuts for garnish. In large bowl, toss together desired salad mix, grapes and remaining walnuts and spoon salad mixture onto four dinner plates. Place one piece of Wild Alaska Salmon over each salad. Shake dressing and drizzle over each salad. Sprinkle salads with reserved walnuts. Garnish with fresh chives, grape clusters and/or lemon slices as desired. Serve immediately.
Smoked Wild Alaska Salmon Deviled Eggs
Ingredients:
• 8 Hard boiled eggs
• 3 Tbsp. Mayonnaise
• 2 Tbsp. black olives, Minced
• 1/8 Tsp. dill weed
• 3 oz. smoked Wild Alaska Salmon
• Pepper and paprika (optional)
Cut hard boiled eggs in half lengthwise. Remove yolks placing them in a medium sized bowl. Stir in mayonnaise, olives and dill with the hard boiled egg yolks. Fold in the smoked Wild Alaska Salmon. Add pepper to taste. Spoon mixture into egg halves and garnish with paprika if desired. Refrigerate until firm.
Makes 16 deviled eggs.
Smoked Wild Alaska Salmon Dip
Ingredients:
• 8 oz of Smoked Wild Alaska Salmon
• 1/2 pound of cheese spread
Remove skin from Smoked Wild Alaska Salmon. In a mixing bowl, flake your Smoked Salmon with an electric mixer until light and fluffy. Add cheese and mix well. Serve with chips or crackers.
