SEAFOOD RECIPES  
 
Halibut Orange




Ingredients:

2 lbs Wild Alaskan Halibut fillets
4 Tbsp Butter
1 rind of Orange
1 juice of Orange
1 tsp Lemon Juice
Salt and Pepper to taste
1/8 tsp Nutmeg
1/4 cup minced Parsley

Directions:

If halibut is frozen, thaw it. Wrap fish in a paper towel for a few minutes to remove excess moisture. Place fish in a single layer in large, thickly buttered, microwave safe baking dish. Combine the remaining ingredients, except the parsley, and pour over the fish. Bake at high for 10 to 12 minutes, or until fish flakes easily. Let stand 5 minutes, then remove to a hot serving dish. Pour any sauce remaining in the dish over the fish. Sprinkle with minced parsley and serve.



Halibut Stir Fry




Ingredients:

1 lb Wild Alaskan Halibut fillets, cut into one inch pieces
1 pkg (10 oz) frozen Asparagus Cuts, thawed and drained
2 tsp Sesame Oil
1 medium Onion, thinly sliced
3 cloves Garlic, finely chopped
1 tsp finely chopped Ginger Root
1 can (4 oz) sliced Mushrooms, drained
1 medium Tomato, cut into thin wedges
2 Tbsp Soy Sauce
1 Tbsp Lemon Juice

Directions:

Heat sesame oil in 10-inch non-stick skillet or wok over medium-high heat. Add halibut, onion, garlic, ginger root, and asparagus. Stir-fry 2 to 3 minutes or until halibut almost flakes with fork. Carefully stir in mushrooms, tomatoes, and lemon juice. Heat throughly. Serve with additional soy sauce if desired.



Halibut Tacos




Ingredients:

8 oz Wild Alaskan Halibut fillets
1/2 cup non-fat Milk
3/4 cup seasoned Bread Crumbs
8 Corn Tortillas
1 sliced Tomato
non-stick Vegetable Spray

Directions:

Preheat oven to 350 degrees F. Pour milk into one shallow pan and bread crumbs into another. Gently coat fish by dipping first into milk, then into crumbs. Be sure that the fish is completely coated. Place fillets on a baking sheet that has been coated with nonstick spray. Bake for 10 minutes or until fish is done. Warm the corn tortillas in the oven and place the halibut, cabbage and tomato slices on top. Serve tacos with tartar sauce or salsa and fresh cilantro. Makes 8 tacos.



Lemon Garlic Alaskan Halibut Steaks




Ingredients:

2 Wild Alaskan Halibut steaks; 4 to 6 oz. each

2 Tbsp Butter or Olive Oil
1 clove Garlic, minced
1 tsp Lemon Pepper
Lemon wedges

Directions:

Melt butter in large skillet over medium-high heat. Stir in garlic. Season halibut steaks on both sides with lemon pepper. Place steaks in pan and cook for 10 minutes per inch of thickness, or until fish flakes when tested with a fork. Flip steaks halfway through cooking to brown on both sides. Squirt with juice from lemon wedges before serving. Makes 2 servings.



Potato Crusted Halibut




Ingredients:

1 Wild Alaskan Halibut fillet
1 Potato
Oil
Seasoned Salt

Directions:

Season halibut with salt. Shred potato. Top halibut with enough shredded potat you can barley see the fish. Heat oil so it is very hot (almost smoking). Add the halibut potato side down. Do this by folding it into the pan away from you so the oil doesn't splash you. When potato is golden brown remove from pan and finish in a 400º oven for 10 minutes.
