A few words about flash-frozen fish:
"The freshest seafood is that which has been frozen
shortly after harvest and remains that way until cooked."
--Jane Brody, Author, New York Times Nutrition Writer
"A fresh-caught fish is like a melting ice cube;
Its quality cannot be improved, only maintained."
--Buck Gibbons, Alaska Salmon Fisherman & Seafood Expert
In the world of wild-harvested seafood, the truest meaning of the word “fresh” is a physical state that most closely resembles just-caught.
But sometimes a “fresh” fish may actually sit on a boat at sea for days after it’s been harvested. By the time this fish reaches port and is unloaded, processed, transported, and sold, it may be more than a week old! By contrast, a just-caught fish that has been flash-frozen shortly after harvest is essentially only hours old when it is thawed, cooked, and eaten.
Surprising but true: flash-frozen seafood really can be fresher than fresh!
